Dave's passion for ribs began as a young boy in Chicago. His father would bring home the best-tasting ribs, slow-smoked by street vendors using 55-gallon drums. They were legendary ribs smoked just like the champion Pitmasters did way down in the Deep South. And thus, his story begins.

Russ Choka took the helm from his Father-in-Law in the 1950's and was a driving force and regular face for decades. Today, Jimmy Todoran (who started for Russ in 1986 at just 15) and Kathy Choka (daughter of Russ) take on the role of caretakers; corporate titles would never work in this working class hot dog joint with all walks of life.


Our menu has changed very little over the last one hundred years. We keep it simple and our customers keep coming back for more.
