For what it's worth, I taught computer science undergraduates an intro to autonomous robotics course. Mostly they had never done any real robotics and they were relatively new to software engineering.

I looked at all the books out there (and still do) and had the most success with his book: Programming Robots with ROS. It is ROS1 and dated in other ways so it’s not really useful these days. 

Some features worth looking at to emulate: it gradually explains ROS with code examples that are interesting and engaging. The explanations of the concepts is clear and in a reasonable order. It covers all the bases almost. 

Anyway that was my experience and I recommend it to you book authors. Likely your path has already been laid but you might get some good ideas.
