My experience is with LineageOS; it doesn't come with google apps installed.
You can add them yourself with
https://opengapps.org/ which gives you some
control over what to include.
Alternatively, there's
https://f-droid.org/ which is mostly FOSS. It has
Telegram, K9Mail, and Firefox for your basic needs.
It's also possible to install APKs but, without google services, they may not
work.
Dishonorable mention for Amazon store:
Pros - Bigger selection than fdroid and less intrusive than google.
Cons - Pain to use and nothing is up-to-date
