Taj's version is best far as I know, though the Blues Brothers did a pretty good job. I'll have to check out Wet Willie's rendition. Have never heard it.

Wet Willie?s version with Jimmy Hall is a stronger more intense, with better dinamics and vocal, interplay with drummer at end also.

Which version? I recall hearing one particular Taj cut that blew me away

If I’m not being too ignorant, what exactly IS a Katy?

Per Wikipedia search, the Katy is what's now known as the Union Pacific Railroad.

Below is from Wikipedia:

The Missouri–Kansas–Texas Railway (reporting mark MKT) is a former Class I railroad company in the United States, with its last headquarters in Dallas. Established in 1865 under the name Union Pacific Railway, Southern Branch, it came to serve an extensive rail network in Texas, Oklahoma, Kansas, and Missouri. In 1988, it merged with the Missouri Pacific Railroad and is now part of Union Pacific Railroad.
In its earliest days the MKT was commonly referred to as "the K-T", which was its stock exchange symbol; this common designation soon evolved into "the Katy".

Cool. Until this very day I had thought that "Katy" was some sort of hip slang for "Caddy" as in Cadillac. LOL

Ha ha, so did I. The words aren’t logical otherwise. I mean when someone says “She took the Kady and left me a mule to ride”, it sounds as if she deprived him of his main means of transportation and
left him with a slow mule. So I presumed that this Kady was merely a local region’s slang for a ‘Caddy’.
I mean, like anyone can take a train. That doesn’t mean that you shorted someone of their major transportation. So I presumed. And you know what happens when you presume? You make a ‘pres’ out of ‘u’
and ‘me’. lololol.

Indeed, the "Katy" was a train. It was the K-T, or the Kentucky-Tennessee railroad.

Here is a link to a YouTube video of Rob Paparozzi singing and playing harp on the song “She Caught The Katy” while sitting in with Chris Brubeck’s Triple Play. (Peter Madcat Ruth is a regular member of that trio.)

The Katy in Missouri is now a rail-to-trail conversion and state park for
biking and hiking. Scenery, wineries, etc.

Look up the Katy Trail, parts of it along the Missouri River are beautiful.

Did I miss that someone already covered this?

The "Katy" refers to the Missouri–Kansas–Texas Railroad
<https://en.wikipedia.org/wiki/Missouri%E2%80%93Kansas%E2%80%93Texas_Railroad>
.[6] <https://en.wikipedia.org/wiki/She_Caught_the_Katy#cite_note-6>
https://goo.gl/N5kSh6

Probably selecting K and T from the name while omitting Missouri.
