Since as far as I know, all hummus is made with oil, do we need to
avoid it? Is there a recipe for one that doesn't contain any oils?
Thanks for everything you are doing to help us with this challenge :)

You can make hummus without oil; Here is my oil-free recipe (http://happyherbivore.com/2009/06/hummus/) though it has vegan mayo, which is processed -- but I have something in the works! I'm going to test it this weekend!! It'll hopefully be on the blog on Tuesday!

Also, for my current recipe, I think you could use avocado instead of the mayo... or tahini (though that's not fat-free);

Happy to help!

I only use oil in my hummus when I'm making it for a crowd who is generally used to the oily consistency. For myself, I thin it out with more lemon juice (I like it pretty lemony). You can add more water to thin it and try adding more tahini for flavor.

I was going to say you can make mayo yourself but all the recipes I know of use silken tofu. I know you can make your own block tofu but not sure about silken. But look forward to what you have up your sleeves :)

I wish I were creative enough to think "oh if I put X, Y and Z together I could make (item).

When I make hummus usually I just use chickpeas and tahini. The moisture in the chickpeas plus the natural oils in the tahini usually work out. Plus a little chopped up garlic, kosher salt, and a little lemon juice.

As promised, I mastered a fat-free (no oil or tahini) hummus recipe --
I was able to sub out the soy yog in my original recipe (http://
happyherbivore.com/2009/06/hummus/) with a whole substitute, and I
dare say I like this hummus even better.

I'll be posting the recipe during the first week of the challenge...
probably on day monday, may 3.

:)
