Dear friends,

It's a beautiful week for eating locally. Each week, I'll be sending out a menu of 4-6 “dinner kits” featuring the best of the local harvest. Fill out the attached Order Form and send it back to me, and I'll deliver these kits to your home, office, or wherever you like (Manhattan & Brooklyn only for now). Each kit is designed to be simple and quick to prepare, makes 2 servings, and comes with my own recipe that I'll send you before delivery. You can even call or write me if you get stuck at any point! They're priced at $30 or $20, and there is an additional $10 delivery & foraging fee per kit.

This is an exclusive, list-based service for now, as I'm working toward better ways to share the love from local farmers. You've been included because you're a friend, previous student of a cooking class, or attendee of a dinner event with the Hapa Kitchen. Here's this week's menu (note each kit serves 2):

$30 kits-

Cider-Braised Pork Chops with Fennel and Polenta
with baby greens salad

Not included in kit: salt, pepper, butter, optional lemon

I got to catch up with Becky Wilklow & family about their small, 5-generation orchard and livestock farm last Saturday. Their tender pork chops are flavorful and the perfect size for a hearty portion. This will be served on Finger Lakes-based Cayuga Organics' coarse-ground yellow polenta, so good you'll want to grab a big bag of it very soon. The pork will be braised with Red Jacket Orchards' cider and caramelized wedges of sweet, anisey fennel that you can save some of to shred fresh in your salad, too.

Swordfish Steaks with Green Garlic Salsa Verde
with roasted baby potatoes and cucumber dill side salad

Not included in kit: salt, pepper, olive oil, lemon

Just imagine a thick, meaty wodge of seared, delicious white-fleshed fish on your plate garnished with a drizzle of your own healthy fresh herb-based sauce (salsa verde). That's what this is. Long Island/Atlantic swordfish is a “best alternative” seafood type according to Seafood Watch, and that's good, because local fishmongers like Blue Moon Fish catch plenty of 'em. Consider it an alternative to a nice hunk of beef tenderloin, with all the omega-3's to counteract the meaty cholesterol in that. We'll roast some nice heirloom baby tomatoes from Francesca at Berried Treasures Farm and serve with a crunchy fresh cucumber and dill salad.

Seared Duck Breast Sandwich
with quick-pickled radishes, carrot & scallions

Not included in kit: salt, pepper, vinegar, sugar, optional mayonnaise and Sriracha for serving

Juicy, rare, duck breast with crisped, golden skin adds crunch to this Banh Mi-meets-a-steak-sandwich. Hudson Valley Duck and other small, local farms have delicious and perfectly portioned cuts of duck breast meat that are fun and easy to prepare. The crisp spring radish and carrot pickles and scallions make a colorful and healthful topping all piled into a couple of hoagie-sized pieces of a baguette from local bakeries Bread Alone or Our Daily Bread.

Fresh Fettuccine with Spring Peas, Mint and Farmer's Cheese
with baby greens side salad

Ronnybrook Dairy has been supplying my yogurt fixes along with friendly chatter every Saturday for some time now. Funny that I never came across their fresh, probiotic farmer's cheese. I picked out the dill variety, and it melts to a creamy, smooth sauce with subtle tang in your pasta! The fresh fettuccine is from the one and only fresh pasta / cage-free egg and chicken purveyor at the Greenmarkets, Knoll Krest Farm, and it's all that. So ridiculously quick to cook, and so delicious with the sweet, June peas from Phillips Farm and some mint.

Spring Ratatouille with Fresh Oregano and Fava Beans
with a crusty baguette

Not included in kit: salt, pepper, olive oil

Warm morsels of just-off-the-vine zucchini and summer squash are smothered with a tangy, fresh tomato sauce and studded with fresh fava beans that are fun to shell from the pod! Heirloom varieties of summer squash like eight-ball and crookneck are just arriving from nearby New Jersey-based farms at the markets and it's great time to indulge. The perfect healthy comfort food to sop up with bread, and the favas add protein to this vegan meal.
