Hi everyone,

I wanted to share an amazing recipe for gluten-free ginger snaps that I’ve been loving. They’re easy to make and perfect for the holidays!

Ingredients:

  • 1 1/4 cups gluten-free all-purpose flour
  • 1 tsp xanthan gum (if not included in your flour mix)
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1/4 cup granulated sugar (for rolling)

Instructions:

  1. Prep: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Dry Mix: In a bowl, whisk together the gluten-free flour, xanthan gum, baking soda, ginger, cinnamon, cloves, and salt.
  3. Cream Butter & Sugar: In a larger bowl, beat butter and brown sugar until light and fluffy. Add the molasses and egg, mixing well.
  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Shape & Roll: Scoop tablespoon-sized portions, roll into balls, and coat them in granulated sugar.
  6. Bake: Place cookies 2 inches apart on the baking sheet. Bake for 10–12 minutes or until edges are slightly firm.
  7. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Tips:

  • Use room-temperature ingredients for better blending.
  • Store in an airtight container for up to a week.
