Ingredients:

  • 1 lb chicken livers
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp cayenne pepper (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil (for frying)

Instructions:

  1. Prep Chicken Livers: Rinse chicken livers and pat dry. Soak them in buttermilk for at least 1 hour to tenderize and remove any bitterness.
  2. Prepare Coating: Mix flour, cornmeal, and seasonings in a bowl.
  3. Heat Oil: Heat about 1 inch of oil in a skillet to 350°F (175°C).
  4. Coat Livers: Remove livers from buttermilk, letting excess drip off, and coat them in the flour mixture.
  5. Fry to Perfection: Fry livers in batches for 3-4 minutes per side until golden and crispy.
  6. Drain: Place fried livers on a paper towel to remove excess oil.
