GIA has 3 nice collections arranged by Phil Roberts: Hymns for Handbells 1,2 and 3. They are arranged for 2-5 octaves of handbells and have varying degrees of complexity offered.
In addition, my friend, the former one-hit wonder Chuck Peery, has just released Volume 2 of his hymn collections "Let Praises Ring" for 3-5 octave bells, organ and congregation. (Morningstar) They are fully reproducible.
Sondra Tucker also has some collections: "Flexible Hymn Accompaniments for Handbells" through Morningstar.
Cathy Moklebust's "Hymn Stanzas for Handbells" (Augsburg) are great too, also reproducible.
When looking at hymn accompaniments for a small group, especially when playing with organ, I wouldn't worry about whether it's 3-5 octave, 2-3, or whatever... I tell my ringers anything below A5 probably won't be heard anyway, so play the upper treble bells and smile!
