Could someone explain the use of the throttle stop screw on an SSF25 to me? I've been using the throttle cable to adjust idle speed.

Yup, the throttle stop screw is what is used to set the idle speed. You want a small amount of slack in the cable to allow for turning the fork without the idle changing. Normally without slack the idle will rise if turning the fork. The throttle should close with a sharp “clack”.

On many carburetors, the throttle stop screw is in the carb body perpendicular to the slide. It has a taper at the end and that engages with a slot in the throttle slide to raise or lower the slide at idle. if the screw and/or the throttle slide are worn, it becomes ineffective. Some of the DellOrto carbs have a throttle stop screw that passes through the top of the carb and the slide. The screw has a stop at the end and that prevents the slide from dropping all the way to the bottom. If you screw the stop in, it lowers the idle speed and if you screw the stop out, it raises the the slide and increases the idle. This is a much better set up as it is not prone to wear. Adjusting the cable has the same effect, but using the cable alone does not allow for any free play in the twist grip. I like to have about sixteenth of a turn of free play in the twist grip before the cable starts to open the slide.
