We are trying to build a custom proxy, and we are wondering if it's fine to make such an assumption, which will be helpful to reduce our complexity.

The protocol definition document lists all of the HTTP/2 headers that are given specific meanings by the gRPC protocol. Make sure you check both the "Requests" and "Responses" sections.
