gRPC, proto3, and HTTP/2

If I understand it correctly, by default, gRPC will encode messages using the proto3 protocol and will transmit them via HTTP/2.

Is that assessment correct?

Messages are serialized via Protobuf v3 and transmitted over HTTP/2 protocol by default, yes.

You need to set up the client and the server with the proper ssl keys.
