How could I convert the .gabc files into something more "playable" and listenable?

You can use Benjamin Bloomfield’s chant tools for a super robotic sounding midi playback. Just pick a chant for a Mass Proper and edit thr gabc and paste whatever you want. https://bbloomf.github.io/jgabc/propers.html

Alternatively, you can pay me $10 and I’ll make whatever kind of audio file you want of whatever chant you want ;)
