In germany we have certain notation called "rezitationston" or "psalmton".
It's noted like the following Picture:
(The >====< part)
Can I recreate this with gregorio?

You can place an equal sign = after the lower-case note letter to get what the documentation calls a linea, or the white/hollow variant by adding the letter r, but I don't know of a command to stretch it horizontally. It's a useful style of notation, so please let us know if you figure out how to replicate it in gregorio.
