What does the copy feature do? I would like a quick way of plotting my
current location.

Copy just copy to clip board. Do you mean like recording track or just use current location as waypoints?

Waypoints or similar; for example, if I see a dead animal on the road,
I need to be able to quickly grab the location from the GPS screen.

You can use manage waypoint and use your current location as a waypoint. But if you want to just get a reference and kept it where else then you can use the copy function in the gps mode.
