Hi, all! The man who's made a most significant impact on my dietary
choices is T. Colin Campbell, author of "The China Study". He'll be
giving a talk on Wednesday, and be part of a panel discussion after a
special pre-screening of the film "Forks Over Knives" on Thursday. The
film's official premiere takes place in Portland in January, but there
have been pre-screenings around the country in recent months. Here's a

Special Talk with T. Colin Campbell, Ph.D. December 8, 2010
7:00pm at Buchan Hall, Eliot Center, 1226 SW Salmon Street, Portland,
OR 97205

T. Colin Campbell was raised on a dairy farm, milking cows. He went on
to earn a Ph.D. in animal nutrition from Cornell University,
conducting thesis research on increasing production of protein in
cattle. However, observations he later made while working on a
nutrition improvement project in the Philippines, coupled with his
research results in the lab, led him to question his prior assumptions
of the value of animal protein, as that research linked the
consumption of animal products to a number of chronic diseases in
humans.

Dr. Campbell is now Professor Emeritus of Nutritional Biochemistry,
Cornell University; Project Director of the China-Oxford-Cornell Diet
and Health Project; and author of more than 300 research papers and
recipient of more than 70 grant-years of peer-reviewed research
funding. He has served on several grant review committees and actively
participated in the development of national and international
nutrition policy. He is an internationally known lecturer and co-
author of The China Study. His work, along with the work of Dr.
Caldwell Esselstyn Jr., is featured strongly in the new powerful movie
Forks Over Knives. Come hear a fascinating talk.

outreach efforts. We are asking for a $5 to $10 per person sliding

Forks Over Knives Portland Premiere January 7, 2011

The feature film Forks Over Knives examines the profound claim that
most of the degenerative diseases that afflict us can be controlled,
or even reversed, by rejecting our present menu of animal-based and
processed foods.

A major storyline of the film explores the separate pioneering work of
Dr. Caldwell Esselstyn Jr. and T. Colin Campbell, Ph.D. as through a
combination of scientific experiments and clinical research the two of
them document significant health improvements just by moving people
away from the standard American diet that is high on animal products
and processed foods. The film also follows some real life patients as
they make these diet changes and see positive changes in their blood
pressure, cholesterol levels, and other levels of health. One of the
"patients" is the film writer and director Lee Fulkerson, a big man
whose dinners pre-filming used to consist of a fast-food double
cheeseburger, onion rings, and a chocolate shake. "By seeing the
amazing results a whole foods, plant-based diet had on the health and
well-being of our test patients, my mind was irrevocably changed,"
said Fulkerson in a recent VegNews article.
