Someone asked me about the software I used to create the screen capture videos.  It's called Jing.  It's free.  You can download it here:

It's very easy to use.  Just set up the frame around your screen and click record.  You need a mic if you want audio to go with it.  You can save the videos you make with Jing (they're flash) or you can upload them to screencast.com with a single click of a button.  Once uploaded you can link to them.  Though all of this is free, screen cast has a storage limit of 2 GB (which is ample) and they also have a monthly bandwidth limit of 2 GB.  The bandwidth limit is ample if you want your class(es) to watch a short video once or twice, but it won't be enough if you want lots of people viewing your video.  You'll have to "Go Pro" ($9.99/month) or find a free cloud service to upload your files to (I'd highly recommend Dropbox as there are lots and lots of cool things that it does besides just storing files).

Jason Paddock pointed me to this, and this may be a better/easier solution for making screen capture videos.  Jing is easy, but the file format is Flash.  If you want to upload your video to YouTube for hosting so that you can embed it in your Google Site, you'll have a problem -- Flash is not supported on YouTube.  You can convert SWF to AVI easily (http://www.freeswfconverter.com) but if you use Cam Studio you can skip that step.  Thank you Jason.

Speaking of YouTube, that seems to play on more devices than some of the other video container gadgets that you can embed your video with on your Google Site.  One I've been using is called Flash Wrapper (by Mori79) but videos don't display correctly when my site is viewed with certain devices (like my Android tablet).  YouTube is probably a better solution, and Cam Studio is an easier way to get your screen capture videos uploaded to YouTube.

Better still is HyperCam.  Easy to use.  Free.  Best quality captures so far.
