What would be the best way to reach out to mentoring orgs. Is there a slack channel or discord channel we could use to communicate with them?

Hello

Most probably they will have something. A discord channel or Slack, or Mattermost, or IRC... Most of them will have mailing lists. In some cases a discourse instance..

You should look for the right channel for each org you are interested in
