What are the NLP(Natural language processing) related organizations
that I can work in this summer.

None, since GSoC 2011 has not been announced yet :)

You can take a peek at the orgs that participated last year:

http://www.google-melange.com/gsoc/program/accepted_orgs/google/gsoc2010

Use the "tags" column to find the type of orgs you are interested in.
Chances are that many of them will return in 2011 (should Google
decide to run GSoC again in 2011).

Just a small word of advice, I recommend that you get involved with projects before GSoC formally commences. Programming is hard, NLP is very hard.

For example, OpenCog is actually more of an artificial intelligence framework rather than a NLP tool. It has one, called RelEx, but that's somewhat independent from OpenCog itself.

Here are some other projects that I know about that have participated:

 - NLTK (Python) [1]
 - Apertium (C++) [2]
 - Ushahidi (Python): Uses NLTK to parse tweets[3]
