Quick question, would the combination of cartographer and turtle bot be right to create a realistic 3d map of an office floor?

Could you elaborate a bit more? What exactly do you mean by "realistic 3D map?" What sensors will you put on the TB?

The problem is, I don't know what is needed at all to achieve my goal with Cartographer. Maybe I've missed some beginners guide :-P

Anything to get me started would be very welcome.

That's a 2D sensor and will not give you a 3D map very easily. Could you elaborate on what you want to accomplish?

I would like to achieve the following:
1. Recognise a signal that describes a room number.
2. Count the number of people on a floor.
3. Count the number of objects.
4. 'Index' the 3D space with the goal of creating a floor plan.

For 1 - 3 I'm using a regular fish lens camera and a combination of OpenCV, Google Vision API and Darknet.

For option 4 I would like to use cartographer, but I'm not sure what is needed hardware wise...

​​The hardware you linked should work, but probably not for 5 cm ​resolution (since it only samples every 0.9deg). SLAMing at 10cm resolution should work fine.
