URL domain host questions

I've been trying to find a direct answer to a question that I've had but I can't seem to find it. I know that if I change my site hosting it doesn't effect my google apps account.
If I change the host of my url what happens to all of my email?
Is it a matter of just changing the mx records at the new URL host?
Will I loose the email that I had prior to the migration?

The reason why I ask is because I had transferred a URL from Dreamhost to 1and1 and I seemed to have lost the email to that address. It was like I never had registered the site with google apps. What did I do wrong?
