Hi

Is it possible through GAM to have activities from a collaborative inbox be logged to a document or exported in any way.

For example, a document that tells which emails are assigned to a user, when it was assigned, when it was completed?

No, there is no API to reed messages from a Google Group in this way. This there's no way for GAM to do this.

Jorge, sounds like you're needing something more sophisticated than the Collaborative Inbox.  The basic features of the Collab Inbox are lacking, IMO.
Other systems/add-ons might be better suited based on your use case.  Maybe https://www.dragapp.com/ or a CRM/support tool system are worth looking into.
