That was in the second line of Ross's reply.  If you want to save the information to a local CSV file:

  gam redirect csv ./SAML_Report.csv report saml

Or you can send it to your My drive as a Google Sheet

gam report saml todrive

I am actually looking for a way to list all the SAML applications configured in the admin console, including details on who has accessed them and when they were last accessed.

AFAIK the admin console is your only choice.  I don't see anything in the API, except for reporting.

I appreciate you clarifying that the admin console is likely the only option for listing all configured SAML applications and their specific access details since it doesn't appear to be available via the API.
