You can't wipe a Mac or Windows device, but disabling the account or resetting their sign-in cookies SHOULD wipe the accounts data from all systems.

Ohh, I so wish that were true.
The data is still available as files in the local directories and caches.
The user just can't login to their accounts anywhere, if you have changed the password and reset what Gabriel mentioned.

However, if the device in question is managed by some MDM, the answer could be quite different.
An MDM could offer completely different power to manage the content of the device.
It wouldn't be Google doing it, though. It'd be the MDM.
