(sorry, I don't use GAM) using GAMADV-XTD3, it should be just as simple as downloading the update file and extracting it in the GAMADV-XTD3 folder ...BEFORE
Click on "Show all 18 assets"
Download the correct zip (I downloaded it to my GAMADV-XTD3 folder)
I opened the zip file and then drag and dropped the contents to the folder, I answered "Replace the files in the destination"
Ran gam version and you can see that the version is now the latest, deleted the old installer and left the newer version there:
AFAIK, there isn't anything more to it than that!

Here you have a good script for updating gam in Windows.
For myself I also created my own scripts for Windows and Linux with GAMADV-XTD3.
