Set utf-8 charset for mails?

I've noticed mails are send with the following encoding.
Content-Type: text/plain; charset=ISO-8859-1; format=flowed; delsp=yes
Content-Transfer-Encoding: base64
To be honest I'm not very familiar with charsets, so ISO-8859-1 may be
sufficient, but I've been wondering if charset can be set?
