Hi all,
As the optimize smart article says, the official Google add-on is “pretty much useless”. But the GA4 Magic Reports add-on works really well and I definitely recommend it.
In GA4 Magic Reports the month ordering is:
Order by dimension|yearMonth__ASC
And filtering for traffic source organic is
Dimension filters sessionMedium__EXACT__organic
Note that GA4 has 3 different sets of traffic source dimensions.
medium only applies to conversion events and so you have to use sessionMedium or firstUserMedium

Anybody has a spark of light for this?

The add-on is not mine, it's the 'official' Google add-on, but I knew a lot of people in this Group were waiting for a replacement for the old UA-->sheets add-on.
And I totally agree that sampling will cause a lot of limitations, but that's the way Google operates now and that will not change I think.

I fairly sure that Segments are only available in the GA4 Explorations tables. These tables are not exposed to the Google Analytics API - Refer to this Looker Studio community post, and specifically Rick E from Google's reply. Unless Google have a massive change of heart, there will never be Segment capability in any reporting solution outside of GA4's own Explorations.
This means your Sheets add-on (and any external reporting tool, even Google's own Looker Studio) will likely be impacted by high-cardinality dimension collapsing to (other), will never have segments, and will offer no option for unsampled or low-sampling rate queries. It's a huge limitation.
