GA4 Reports Builder - Having trouble recreating old reports

Hi! I'm trying to transition from the old Google Analytics Spreadsheet Add-On which worked perfectly to the new GA4 Reports Builder which is a little more challenging. Previously we had an "Organic Searches" report set up with metrics set to "ga:organicSearches" and dimensions set to "ga: date" and I can't figure out how to recreate this in the new builder. Any of the "organic" metrics I've tried have pulled in no results at all.

Others I'm having issues with are:
Social Media Conversion Rate
Previous Metrics: ga:transactionsPerSession
Previous Dimensions: ga:socialNetwork, ga:date

Now I'm not sure how to break it down by platform.
