You might want to check these codes jQuery and jQueryUI within Caja Playground environment ... there are some good samples and you can modify and improvement each model :

I don't believe you're allowed to use Javascript at all in Google Sites, outside of a few pre-defined widgets. If you're really trying to incorporate jQuery UI into a Google Sites site, then you're going to need to find another hosting solution.
