is there a certain tag like <ignore>don't translate this stuff</
ignore> for google translate so that it won't jumble up certain
variables in an email we need it to translate?

There is no such tag that is documented. However, you could easily implement one on your own using regexps.

Though it looks like it's missing from the documentation, you can do
that by adding a "notranslate" class to any element:

Though not mentioned in API documentation, the "notranslate" class is
mentioned in a Google Translate FAQ:

http://translate.google.com/support/?hl=en

(See "General information for webmasters". An example is shown using
<span class="notranslate">, but the closing </span> tag is erroneously
omitted.)
