Sweet potato & coriander soup
Gluten free
1 teaspoon your favourite oil. Mine is avocado
2 medium leeks chopped coarsely
3 cloves garlic, quartered
2 medium sweet potatoes (800g), chopped coarsely
1 litre chicken or vegetable stock
160ml light evaporated milk or soya milk for dairy free
4 tablespoons finely chopped fresh coriander
Heat oil in large pan; add leek & garlic, stir until leek softens.
Add sweet potatoes & stock; bring to a boil. Simmer, covered, 15
minutes or until sweet potato softens. Blend or process the soup until
smooth. Return to pan; simmer uncovered until soup thickens slightly.
Add milk & coriander and heat through.
