Beef Hash Omelet
Based on a recipe from "Lüchow's German Cookbook".
You can use braised or roast beef instead of boiled beef.  Using lean meat will lower the calorie and fat amounts.
I like to add a dash of paprika or curry to this as well.
Serves 2.
720 Calories, 5 grams net carbs, and 52 grams fat per serving.

2 cups boiled beef, finely diced
1 onion, chopped
1 or 2 slices bacon, chopped
2 Tbsp butter
4 large eggs
Salt and pepper to taste.

Beat the eggs until they are well mixed.
Melt the butter in a frying pan.
Cook the beef, onion, and bacon in the butter until they are hot and bacon is cooked.
Add the eggs and allow them to spread in pan.
Season to taste with salt and pepper.
Let the bottom brown as you would for an omelet.
Fold over and serve.
