There are a number of recipes out there for these light cookies.For a richer flavor, replace the shortening with butter.
Some recipes call for a cup of coconut flakes in the batter.

1/2 cup unsalted butter
1/2 cup lard or shortening
1/2 cup sugar
1 tsp baking soda
1 tsp vanilla extract
2 egg whites
2 cups flour
1 tsp cream of tartar.
Cream the shortening, butter, and sugar together.
Add the egg whites and vanilla extract, mixing well.
Sift the baking soda, flour, and cream of tartar together.
Add the sifted mixture to the creamed mix.
Mix until smooth and thoroughly blended.
Roll into balls.
Dust with light brown sugar or a cinnamon/sugar mixture. You might need to moisten the balls in order to get the sugar to stick well.
Place the balls on cookie sheets.
Bake at 375° F for 15 minutes. Don't let the cookies turn brown.
