Christmas Divinity Candy #2 - a recipe from Rachel Walters
Store these in an airtight container or they will get hard and crunchy.
Makes 50 pieces.
95 Calories, 22 grams net carbs, 2 grams fat per piece.
4 cups sugar
1 cup light corn syrup (clear Karo syrup)
3/4 cup water
3 egg whites, stiffly beaten (forms soft peaks)
1 tsp vanilla
1 cup broken nuts
Place the first three ingredients in a saucepan on low heat.
Stir until sugar is dissolved.
Cook without stirring until the mixture is 255°F (If you drop a little in cold water it forms a hard ball).
Remove from heat and pour in a fine stream (while beating constantly into the 3 egg whites.
Continue beating until mixture holds it's shape and is no longer glossy.
Add the vanilla and broken nuts.
You can either:
Drop quickly from the tip of a spoon onto waxed paper in individual peaks
or
Pour and spread into a buttered pan. When the candy is firm, cut into 1 1/2 inch squares.
