Damned Good Sweet Potato

c Sweet potato cubed
1/2 c White sugar
2ea Eggs beaten
1/3 c
Raisins
1/3 c Pecans chopped
1/2 ts Salt
4 tb Butter softened
1/2
c Half-&-Half
1/2 ts Vanilla extract
1/4 c Brown sugar packed
1/4
c Honey
1/3 c All-purpose flour
3 b Butter
softened
Pre-heat oven to 325 deg-F.
Put sweet potatoes into a
pan with water to cover.
Cook on med-high heat until tender then drain &
mash.
Mix sweet potatoes, white sugar, eggs, raisins, pecans, salt, butter,
Half-&-Half & vanilla extract together.
Mix until smooth then
transfer to a 9" x 13" casserole dish.
Mix brown sugar, honey &
flour.
Cut butter into mixture until mixture is coarse.
Stir in pecans
then sprinkle this over sweet potato mixture.
Bake for 30 mins. until topping
is lightly brown.
