This is our late lunch/early supper today.
Mike's Stir Fry
Serves 4.
450 Calories, 8 grams net carbs, 29 grams fat per serving.
1+ pounds stewing beef cut into small cubes
1 oz diced pepperoni
3 oz diced ham
3 bell peppers (1 each green, yellow, red)
1 medium onion
8 oz mushrooms
1 stalk celery
minced garlic
soy sauce
curry, paprika, pepper, salt, oregano, parsley, sage, rosemary & thyme
8 oz beef broth
4 oz red wine
olive oil
Slice the vegetables.
Grease the pan with olive oil
Place the meats and 1/2 of the onion in the pan.
Add the spices (but not the soy sauce) I don't usually measure them,
I just shake them on until it looks right. You'll need to experiment.
Sauté until the beef is brown and the onions tender.
Add the rest of the ingredients.
Bring to a boil and cook for 5 minutes, stirring frequently.
Reduce heat and simmer until all the vegetables are tender, stirring every few minutes.
Serve over rice, or just by itself.
