Sweet Potato Pancakes #2 - a recipe from Mike Muth

1 cup grated sweet potato
1/4 cup onion, diced fine
Peel the potatoes and place them in cold water.
Chill overnight in your refrigerator.
In the morning, drain and grate the potatoes.
Squeeze the fluid out of the grated regular potato.
Mix all the ingredients except the baking powder.
Mix in the baking powder last.
Cook on a hot griddle or skillet in butter until browned on both sides.
