Brötchen #3 (Bread rolls) - a German recipe from Mike Muth
Makes 12 rolls.
230 Calories, 42 grams net carbs, 2 grams fat per roll.

2 cups warm water
5 tsp yeast
5 cups flour
1/2 cup whole wheat flour
1 tsp salt
1 Tbsp sugar
2 Tbsp butter
1 egg white

Dissolve the sugar in 1 cup of lukewarm water.
Add the yeast and stir well.
Sift together the flours and the salt.
Cut the butter into small pieces and scatter it throughout the flour.
Add the dissolved yeast.
Beat.
Turn onto a floured surface and knead the dough until it is
smooth and elastic.
Put into a greased bowl and allow to rise until doubled.
Punch down the dough and cut into 12 pieces. If you have a kitchen scale, each piece will be about 11 grams.
Shape into oblong rolls about 1 inch high, 2 inches wide, and 3
inches long.
Set the rolls 2 inches apart a baking sheet lined with parchment paper.
Allow to rise for about 15 minutes.
Flour the handle of a wooden spoon and use this to make a
lengthwise crease in the top of the rolls.
Allow to rise until doubled.
Mix an egg white with an ounce of cold water.
Brush the rolls with the egg white mixture.
Bake at 400° F until golden brown, about 15 - 20 minutes.
