Sweet Potato Biscuits #3
Makes 10 biscuits.
215 Calories, 24 grams net carbs, 10 grams fat per biscuit.

3/4 cup sweet potatoes, cooked & mashed
1/4 cup butter, melted
4 Tbsp sugar
1 1/2 tsp molasses
3/4 cup flour
1 cup whole wheat flour
1 /2 Tbsp baking powder
1 tsp baking soda
1 tsp salt
3/4 cup buttermilk

Beat the sweet potatoes, butter, sugar, and molasses at medium speed until well blended.
Sift the flour, whole wheat flour, baking powder, baking soda, and salt together.
Add the sweet potato mixture and buttermilk to the sifted ingredients.
Mix until the flour is just moistened.  Overmixing will prevent the biscuits from properly rising.
Turn the dough out onto a floured surface.
Knead 6 to 8 times.
Roll out the dough to 1/2 inch thickness.
Cut out biscuits with a greased biscuit cutter or a greased glass.
Place on a parchment-lined baking sheet.
Bake at 450°F for 15 - 20 minutes.
