Speck und Kraut (Pork and Sauerkraut) - an Amish recipe
Serves 8.
This also works well with thick slabs of ham, smoked pork chops, or bratwurst.
Serve this with mashed or boiled potatoes. We prefer this with mashed potatoes.

2 lbs fresh pork
cold water
1 quart sauerkraut
salt and pepper
Put pork in large stew pan.
Add just enough cold water to cover the pork.
Cook slowly for 1 hour.
Add the sauerkraut making sure there is enough liquid in the pan to cover the meat and kraut.
Cook slowly for another hour.
Season to taste with salt and pepper.
