Chimichangas - a Mexican recipe
You may substitute pinto or cranberry beans for the chili beans.
Serve these with hot sauce and salad.
Makes 12.
350 Calories, 20 grams net carbs, 25 grams fat per chimichanga.

12 flour tortillas
1-1/2 lb to 2 lb hamburger
1 onion, chopped
salt to taste
pepper to taste
taco or chili seasoning
1 cup canned chili beans
cheese, grated
oil or lard
hot sauce

Wrap tortillas in tin foil and warm in oven a few minutes.
Fry hamburger with onion, salt, and pepper.
Add 1 cup beans and season with taco or chili seasoning.
Simmer.
Put about 1/4 cup of the mixture into each tortilla, sprinkle with cheese and fold together (secure with toothpicks).
Fry in about 1/2 inch hot oil until both sides are golden brown and crisp, turning once.
