Baccala alla Giardinera (Cod) - an Italian recipe
Use a
light touch with the garlic and parsley. You want enough to enhance
the flavor without overpowering it. A clove of garlic and 2 Tbsp of
parsley is a good starting point.
Serves 4.

16 oz cod
2 carrots
1 turnip
1 oz butter
1/2 teacup boiling water
salt
minced garlic
minced parsley
Boil the cod.
Break it up into flakes.
Cut up two carrots and a turnip.
Boil the vegetables gently.
When they are half-done, remove from heat and drain.
Put the vegetables in a stewing pan with the butter, 1/2 cup water, salt to taste, garlic and parsley.
When they are well cooked, stir in the fish and serve.
