Potato Soup #1
A simple, but tasty recipe for a cold afternoon.
Serves 6.
397 Calories, 27 grams net carbs, 26 grams fat per serving.
1 large onion, diced
2 cups carrots diced
2 cups celery diced
2 cups ham, diced
1/4 cup butter
8 cups water
4 cups potatoes, diced
2 cups half and half
1/2 cup chopped parsley
1 tsp chopped chives
Combine onions, carrots, celery, ham and butter in a Dutch oven or stock pot.
Cook on medium heat until onions are golden.
Stir in remaining ingredients.
Cook until done, about 1/2 hour.
Season to taste with salt and white pepper.
