Apologies if this has been covered before, but is there a way to just simply play all cues in a show, one after the other, without having to manually trigger each cue?

The way to do this is to enable "Auto-follow" in your cues. When enabled in a cue, Auto-follow causes the next cue to start playing when that cue finishes. If you want an overlap or a gap between the two cues, you can set the "Post Wait Time" value accordingly. Negative post wait to overlap, a positive post wait adds a gap.

If you have an existing show already, you can tap the gear button in Edit mode and "Select All Cues", then tap Edit to batch edit all your cues and enable these settings in one step.
If you always (or at least most of the time) want the cues in your show to have these settings, you can open the Sidebar and edit your New Cue Template. This screen determines the settings your new cues get when you add them to your shows. (You can of course customize them later).

To go a step further, if you want your whole show to loop back to the beginning after the final cue in your list plays, turn on "Continuous Show" in the "Settings" screen for your show.

How do I set up GoButton app so that when the STOP button is pressed it will fade the current track and queue up the next track ready to play it (once I press the Go button)?

To slightly expand on the previous answer, Go Button is designed to let you move thru your entire show just by pressing GO.   So rather than pressing the "Stop" button (which is designed to halt the entire show), you can think in terms of what you'd like the next GO to accomplish. Normally that means playing the next track, but you can also insert "Go Actions" that do other things before the next track becomes selected. 

The "Fade Out + Auto Stop" preset button in the previous reply does set the Fade Out duration for the cue, but it also adds a fade out Go Action. This go action which will let you tap GO to fade out the current track. Once you trigger that action, the next cue is selected and ready for your next command.
