Yes there's a way to do that in GoCD. Please consider using "Secure Variables" section of environment variables. PFA the screenshot of how it looks in GoCD. The good part (with regard to security) is, you can only reset the value but not see the existing value. Also the environment variable is saved in an encrypted form in the config.xml.Hope this helps!
