This one is from my mom. It's delish. Pair with a green salad or cucumber salad. :)
1/4 cup pine nuts
1/4 small onion, finely chopped
2 cup water
saffron threads
1 cup rice
3-4 cloves garlic, chopped
1t paprika
1t cumin
1/2t ground ginger
cayenne to taste
1 lb. prawns, peeled
1/2 cup cilantro, chopped
brown pine nuts in a skillet on the stovetop. put aside.
brown onion in a small amount of oil in a sauce pan or your rice cooker. add 2 cups of water and saffron, then add rice. let rice cook.
about five minutes before the rice is done, heat a li'l olive oil over medium heat. brown garlic. add spices and prawns. cook untilprawns are pink. when prawns are done cooking, turn off heat and add cilantro.
add pine nuts to rice prior to serving.
