How to I manage folders within Gmail/desktop?

Hello all.
I know how to create notes in Gmail so that they will sync up with Gnotes.
I also know that the folder structure is somewhat stored somewhere (in Gmail?) as I can sync with multiple devices and it works great.

However, how can I manage this folder structure within Gmail? How do I choose which note goes into which folder?

Alrighty.. I decided to migrate to Gnotes cloud and use the web app.

hi Dato,
   Cloud sync was dead for many days this  month (July)  so i moved to Gmail sync. 
Then i  noticed i can not edit Notes in gmail... essential for me since I edit more notes on PC  then on phone .
 The only workaround that seems to work is to   copy note to DRAFTS and also label this new message as NOTES in same time ....
 but i would have to manually  do this for all my messages ,1 by 1 .

Maybe in the next version of Gnotes   to import notes to Drafts    and also as NOTES label in same time ?

p.s. your app was best out there , fast editing  & start on my old Samsung android , with good synch .
