Okay, then I'm eager to get this working! ... yet not clear on exactly how to achieve it.

So... do you have the step-by-step as to how a user can arrange to send later an email composed in Gmail on Android?

Hello David,

You would follow the same steps as the tutorial video shows for a web client (eg. create an email, compose the date/time on the first line) but on your Android device.

Then apply the gmaildelaysend label (instructions on how to apply labels in Android).

And that's it. From Gmail Delay Send's perspective the email draft is the same if you had composed it on Android, web client or any other gmail compatible device.
