When I receive an e-mail I would like to forward, (usually a joke)
there will usually be 2 or more addresses at the beginning.

I would like to be able to edit these out before forwarding.

I have tried saving them in WORD but it doesn't seem to work -

Thanks for any help!

Once you click the forward link you can edit anything in the email Gmail creates for you. You shouldn't have to do anything special.

when you go to forward you will have no contacts . you will have type
in addresses. Easy way is to hold left mouse button and highlite the
joke. right click and copy.. go to contacts- pick who you want to send
to and paste the joke in your composed mail. new version has been
fixed and will now copy and paste pictures also.

You probably only have to type two or three letters for each address though... Gmail should pop up an box with names/addresses in your contact list which match what you have typed so far. To select them use the arrow keys and enter or the mouse.
