(I must be having a "senior moment"....)

Didn't there used to be a way to undelete a message?

I'm looking at the options available, especially under More Actions,
and the drop-down arrow to the right of the Reply button, and I can't
find it anymore.

The only thing I could find, was the little "x" next to the Trash
label just to the right of the subject, when viewing a message. It
seems strange that this is now the only way to do it.

There was (and I guess still is; but I don't pay attention at that time) an "undo" bar RIGHT after you delete a message that could undelete a recently deleted message.

There is also the "Move to Inbox" button at the top and bottom that is the same as undelete.

Still there.

But I wanted to undelete a message that had been deleted much earlier.

Well, that's what I was looking for. And those buttons are still
there in almost every other view in Gmail; but they disappeared when
looking in the Trash!

(Do I have a problem with my web browser? I'm using Chrome.)

Don't forget the 30 day auto-removal from your account storage.
Until that point is reached, you can select and move the item back to
another label/inbox

Yes, but HOW do you move it back to the Inbox?

Say I'm looking at the message that I want to get either out of trash,
or into the inbox. There is no button anymore for "Move to Inbox",
like there used to be.

Perhaps Google found that the button wasn't being used often enough,
so they got rid of it?

The "Move to Inbox" function is in the 'Move to' drop-down menu (as
just 'Inbox' in the list, near the bottom). Generally, though,
clicking on the 'x' after the 'Trash' label [in the header] will move
a message/conversation back to the Inbox.

Joe brings an interesting point/improvement to this.  Previously, when you went to recover a trashed message, your only option was to move to inbox.  Sure you could add a label, but when it was pulled out, it ALWAYS went to inbox; then you had to go to the message again from another view; then you could archive.  Now (I just tested), I can take a message in trash and move it directly to a label; without having to get it back out of inbox again.

This is an improvement; and if you still want it to go to inbox; just use the move-to drop down and select inbox.
